The key to harvesting in the heat is to get the produce out of the heat as soon as possible and into some cold water. The more technical term is "hydrocooling" and it just means that water is used to remove the 'field heat' from the produce. The quicker this happens the higher the quality of the produce. We use this method throughout the year, but it is particularly important when the weather is hot and humid.
