Why ARE wax beans called wax beans? They don't taste waxy, and to the best of my knowledge do not have wax in them. After a bit of research I am still at a loss as to the origin of the name. The standard definition states that wax beans are a yellow version of a string bean that is also known as a butter bean. If green beans are green beans, why aren't wax beans called yellow beans? Curious, eh?
Regardless of their name, wax beans are very tasty and nutritious. I find the wax beans to be a little sweeter in taste than their green counterparts and are my favorite type of string beans. Nutritionally, wax beans are a low calorie source of dietary fiber, iron, manganese and Vitamin C. Wax beans can be enjoyed raw, boiled, roasted or sauteed.

Oven Roasted Wax Beans

Ingredients
- 1 lb. wax beans (ends trimmed)
- Olive oil
- Salt and pepper (to taste)
- Lemon juice (to taste)
- 1 tsp fresh thyme
- a handful of roasted peanuts
- Finely chopped fresh ginger (to taste)
