Market - October 19th

The seasons, they are a-changin' and there is no place that embodies this change better than the Blue Skys hoop house.  This is what it looked like a few short months ago.  Hundreds (yes, hundreds) of tomato and cucumber plants being trained, single stemmed, vertically up a string.

Today, it looks much different.  The last of the tomatoes are being removed and are being replaced with plants that can survive, and thrive in the protected winter environment of a hoop house.

Spinach, Mesculun Mix, Asian Mix, Swiss Chard, Mizunna, Ruby Streaks and a variety of Lettuce starts have been planted and are beginning to grow.

One of my favorite cool weather salads is a spinach salad with honey mustard dressing.  It is easy to make and as an added bonus, a majority of the ingredients are available at the farmers market or even closer, my own backyard.  

Kim's Spinach Salad with Honey Mustard Dressing
1 serving

Start with a big handful of spinach (Blue Skys Farm).  Add one carrot (backyard) shredded,  one scallion (Pak Express) sliced and mix.  Take a small handful of raw sunflower seeds (Trader Joes) and toast in a saute pan.  While waiting for the seeds to toast, break up some Beltane Farm's Feta Cheese on the top of the salad.  When seeds are toasted, put them on your cutting board to cool a bit.  Here's when you can make a quick dressing.  In a jar with a cover, add vinegar of choice (about 1/4 cup) and some extra virgin olive oil (about 1/2 cup).  Mix, taste and adjust ratio if necessary.  Add a teaspoon of your favorite mustard, a bit of Bernie's Bees honey and again, adjust to taste.  A little salt and pepper and you are good to go!  Add the sunflower seeds, drizzle salad with your homemade dressing and enjoy.  For something a little more substantial, add a poached egg (Pak Express) to the top.  Yum!
